Quick New & Healthy Recipe Using Millets

You’ve purchased millets and you’re not sure how to cook millets? Well, here’s the good news! We, at Millesbury bring to you a variety of recipes that your taste buds will love to gorge on. But before we move on to the recipes, we would like to enlighten you briefly regarding the benefits of millets so that it becomes an important part of your healthy meal.

It is a known fact that millets which are cereal crops are extremely healthy and a powerhouse of nutrients. Its packed with protein, antioxidants. The nutrients lower your blood sugar and cholesterol levels. In India, we have been using millets in our regular diet since centuries, but it is only in the past decade that people have become aware of its benefits and have thus started including millets in their diet. Besides its gluten free, making it an excellent choice for those following diet control.

Well now, let’s move over to the recipes for millets:

MILLETS KHICHDI

Little Millet khichdi recipe is prepared with loads of veggies and lentils along with spices. Make it for a leisurely weekend breakfast or brunch. It is a nutritionally balanced one-pot meal. A must try recipe!

Ingredients Required:

½ cup little Millets/ Saame (washed and soaked)

¼ cup moong dal / split green gram / hesaru bele (washed and soaked)

½ onion sliced

Few curries leaf’s

1 tbsp. ginger garlic paste

½ carrot chopped

1 potato chopped

1 big or 2 small tomatoes chopped

¼ cup green peas

½ cup microgreen kale leaves (green leaves) optional

1 ¼ tbsp. coriander powder

½ tbsp. red chili powder

½ tbsp. garam masala

¼ tsp turmeric powder

2 tbsp. ghee or oil

½ tsp cumin seeds

1 tsp kasoori methi (dried fennel leaves)

2 ½ cups water

Salt to taste

Garnishing:

1 tbsp. finely chopped green coriander

Directions to Cook

1. Soak millets and lentils for an hour. Drain and keep aside.

2. Heat 1 tbsp. ghee or oil in a pressure cooker. Add cumin seeds, curry leaves and allow them to crackle. Now add sliced onions and fry till they are golden brown. Takes about 5-6 minutes. Add ginger-garlic paste and cook for 2 minutes. Now add all chopped vegetables and mix well. Then add the millets and lentils, stir well

3. Add about 2.5 cups water, kasoori methi, red chili powder, turmeric powder, garam masala powder and salt.

4. Cook for 4 whistles.

5. Open the cooker. Sprinkle 1 tbsp. ghee or oil on khichdi and fluff it up.

6. Garnish with coriander leaves

7. Your mouth-watering millets khichdi is ready to serve. Serve with pickle, curd and papad.

NOTES

  • Soaking millets is important as it helps in cooking it fast.
  • Millets tend to dry out more during cooking hence adequate ghee/oil is needed.
  • Add chilies as per taste. You can opt for green chili too
  • You can use any variety of millets in this dish.
