Millet Idli

Millet Idli is a healthier version of the idli, this recipe is made purely with foxtail millets and urad dal. The substitution of rice with foxtail millets which are rich in calcium, fiber, iron and potassium makes it a better and healthier option especially for diabetics patients.


Ingredients

  • Foxtail Millet
  • Whole Urad dal
  • Salt

Recipe

  1. First wash and soak the millets and urad dal with water separately. Drain, soak with fresh water for 6 to 8 hours.
  2. Blend the soaked millets and dal into a smooth batter, add water as little as possible. Please note – we need to have a thick batter similar to that of an idli batter.
  3. Remove the batter into a large container, add salt according to the taste. Mix it well and store the container into refrigerator until required.
  4. To make idli, fill the idli rack with the prepared batter. You can use large as well as small idli stand.
  5. Fill the idli steamer with a little water in the bottom. Steam the idli for 10-12 minutes on medium flame.
  6. After steaming, turn off the heat. Open the steamer and check if the idli’s are perfectly steamed or not. If it’s perfectly cooked, leave the idli in the steamer for another 5 minutes.
  7. Now you can remove the millet idli from the steamer, sprinkle some cold water all over the idlis, wait for another 5 mins and then start removing idlis from the rack.
  8. Serve the Foxtail Millet Idli along with Sambar and Coconut Chutney to enjoy your morning breakfast.
